Not too much going on with us lately. It's getting cold. I broke down and turned on the heat a few days ago and last night when we were walking Jes, we noticed that the tennis court where we play tennis has been converted into a hockey rink, a sure sign that winter is knocking at the door. The good news of the day, is that our friend, Kristi is coming to visit us in November. That's exciting! Lots to plan on seeing and doing! And finally, I have to share this chicken recipe...we had it last night and it's SO yummy! Enjoy!
Yogurt and Spice Chicken (serves 4)
4 lg. boneless, skinless chicken breasts
1 cup plain lowfat yogurt
1/3 cup fresh lemon juice
3 to 4 cloves garlic, pressed
2 tsp. curry powder
1 tsp. cinnamon
1/2 tsp. cumin powder
1/4 tsp. sea salt
a dash or 2 of nutmeg and/or allspice
several dashes of cayenne
Basically you mix all the ingredients together in a bowl, then add the chicken for marinading. Cut a couple of slits in the chicken so it absorbs the sauce. Make sure the chicken is completely covered with marinade. Let the chicken marinate, covered in the fridge for 4 hours, turning the chicken in the marinade 2 to 3 times. Then place chicken on the grill (scraping off excess sauce) until cooked. Enjoy! So, so yummy!
