If I can't bake it...

...I'll blog it! I'm on a bit of a baking break at the moment. Well, except for the gluten and dairy free cupcakes I just made and the dairy free ginger snaps I made 2 days ago with spelt flour and the stuff I'm going to bake tomorrow for when Rej and Clo visit. But, really, other than that I'm not baking anything with wheat, dairy or sugar. My poor body needs a break! I've been doing a bit of a detox since Monday and while I feel like I've been run over by a garbage truck today, I think that's actually a good thing! That means it's working, right? Anyway, I can't stop thinking about banana bread! Oh, how I love it! But, it gives me such a bad tummy ache and makes me feel so terrible. Yet, I seriously can't stop thinking about eating it!!! I'm like an addict! Especially since I worked out how to bake it just right in my temperamental oven (Oh, the wonders of wax paper!). So, being the kind person that I am...I figure just cause I can't enjoy it, doesn't mean you can't! You can thank me later...hehe;) Here's the recipe...let me know how it turns out!

Banana Bread

1/2 cup butter
1 1/2 cups white sugar (I've used as little as 3/4 cup and it still turned out)
2 eggs
1 cup mashed ripe bananas
1 tsp. vanilla
2 cups flour
1/2 tsp. baking soda
2 tsp. baking powder
1/4 tsp. salt
1/2 cup milk

Cream butter and sugar together. Add eggs, banana and vanilla. Mix well with electric mixer. Sift together dry ingredients and add to mixture, alternatively with milk, beating until well incorporated. Pour into a greased bread pan (I line my pan with baking paper to keep from burning but that's only because I have a poopy oven!). Bake for 1 hour and 15 minutes at 350 degrees Fahrenheit (approximately 175 Celsius). And, enjoy. Oh, yes, enjoy! Enjoy a warm piece, spread with butter and a cup of tea and think of me! :)

PS. I'm not sure where this recipe originally came from. I know my Mom makes it and my sister and my grandmother. For some reason, I think maybe it was my Aunt Pearl's recipe...? Either way, it's yummy!

MMM, I LOVE banana bread!

Rich makes an amazing one but I will definetly show him this recipe. He just made a loaf this weekend and drizzled some chocolate on top, it was yummy!
